You could but it would be expensive and why would you want to.
All the Motorhomes we have had have been gas only heaters it's never been a problem. Far cheaper to run the heater on gas than pay for electricity that also applies to the fridge if it's 3 way.
Earlier versions of the Truma Combi boiler (ie. C3402 or C6002) you could retrofit a 240v external heater jacket for about £200. We had one installed on a 2002 van. It only heated the water.
The latest Truma Combi boiler 4 or 6 have two electric elements installed internally within the boiler. My current boiler is a Combi 6 (gas only). I did consider purchasing a Combi 6e boiler, about £2000, but decided it was uneconomic. You can purchase a lot of gas for that
In a few of My campervan's that I have owned I have fitted and plumbed in a Propex 10L 240V water heater as an *EXTRA* water heater for longer hot showers { approx. Double the hot water }. The Propex water heater cost is around £180 and is easy to fit.
