Is it wise to fill up add blue like filling up with diesel when getting the van ready for the winter?

No, just wait until you get a dashboard request to fill.
You usually have about 1,500 miles in which to fill up.

Edit from the winter prep condensation aspect I'm not sure, maybe others will know ?

I understand Ad Blue has a shelf life, so probably not.
