We store our 1993 Hymer 544 in a barn over the winter months if we aren't using it, on the instructions left by what seems to be the original owner
it says to fill the water tank when not in use, is this the norm ? is it to protect the pump or some other reason ?

Water should be drained down tank, boiler & pipework. Leaving water in the system in a cold snap you could end up with very expensive repair bills.
 
Make certain the boiler is drained, it's a costly repair if it suffers frost damage
 
Most boilers have a dump valve for cold weather to empty the boiler and prevent damage, on our Hymer, this also empties our fresh water tank, which is fine if you're using the motorhome because the taps etc are still in a warm environment.
However, as said, for winter storage, you need to drain down the boiler, fresh water tank and all the taps and shower head to avoid freezing water from splitting the taps or pipes.
 
Drain everything. Open all drain valves and all taps. Any water left in the van that can freeze could damage anything.
Make sure you turn off the water pump.

Don't forget the toilet flush if it's a separate tank. BUSBY.
