If it's anything like the over-sink lockers in our A-Class they won't be deep enough. What model have you got? (It says you got an Elddis Encore in your profile.)
 
We fitted one in our Rapido A Class 10000 which is above the cooker / sink area, we use it quite a bit on and off the invertor but most people don't want or use them due to various reasons like wasting space. We have a lot of space / storage in ours so not so much on an issue.
 
We fitted ours in the steps leading to the beds on our Carthago AClass. It looks like a cupboard. Extends into garage dead space so ideal place.
 
I fitted one in the cupboard above the fridge in our Pilote. When traveling it is used to store bread and all sorts of soft produce in it and around so not loosing much cupboard space. It’s used a lot on or off grid.

If you want to get any serious use from it you will probably need to remove it from the locker or it could easily over heat. These things are not light so make sure you are comfortable lifting it in and out if you have to.
