How do you manage to book a dog cabin on Brittany Ferries?

Since we now have a very clingy rescue dog, I have tried to book a dog friendly cabin to go to either Spain or France. They all seem to be booked up. Does anyone have any tips on how to actually get one of these?
 
Somebody recently suggested crossing over to Ireland from Wales.
Then get the Bilbao route from Rosslare?

That leads me to another question-I have looked at all the Irish Ferry sites and it appears that a medium or large sized dog cannot stay with the owner for the crossing-they have to go in the car or in a cage. Both of these would completely spook my poor dog-she behaves wonderfully so long as she is with us but would be very distressed alone in the van or in a cage. She's too big for a pet carrier box so it seems we can't go to Ireland at all! Shame, I really fancied the Wild Atlantic Way!!

We successfully book them every year by phoning as soon as they come out usually around November for the following year as long as your flexible never had a problem.
