I have to be in uttoxeter on Thursday is there any good over night stops near to the premier inn i was meant to be having the interview in skegness but its changed venues to the premier in uttoxeter looking for somewhere to just park up Wednesday night within 10 mile radius.
Preferably near to somewhere to get something to eat

I stayed at a nice cl on Aston lane just off roundabout to horse race track, but that maybe not what your looking for.
There is a CMC site at the track also.

There is a truck stop behind the premier inn, sure you could stay there.
All sorts of food places.

I'm sure you would be ok there but you could also book in at the premier, usually reasonable, but if you are absolutely stuck you are welcome to stay here , we are five miles away though and no amenities apart from a pub across the road.
