Well it’s not really tonight but 3 weeks ago in France , didn’t have data to list at the time We were camping at an aire about 12 miles upriver from Limoges on the River Vienne , I decided to go feral for dinner , you know like bear grylls , find it / catch it / kill it / cook it / & eat it , What is it you ask well it’s not cuisses de grenouilles or escargots but écrevisse

Bear grylls uses vimto! Not sure about the jam sarni though?
The bucket of Crawfish look the part though I will give you that. Freezer for 5 mins than cook in boiling water for 5 mins? Sauce ...white wine and a little butter and shallots and fry it up!

To be fair the wife wouldn’t touch them so mostly mine apart from the English couple next to us who both had some & throughly enjoyed , so much so he went hunting the next day for his supper

Just a guess, they look like the Red Signal type of I think American Crayfish, that have decimated our native ones here in The UK,maybe Europe also, others will verify that hopefully, but they sure look good.

If as I think they were, Signal Crayfish, you were probably safe but the fines for catching native crayfish in France without a permit and at the wrong time of year can be huge, hundreds of euros as a minimum. The season for native crayfish is also very short, just a few weeks.

Not a criticism, just a warning to anyone else who might want to try it - be careful. :)

Yes American signal crayfish & yes they have & are decimating our & Europe’s crayfish and fish stock’s
So I was doing our french cousins a favour ? , DBK I was well aware what I was catching but it was a good point you made to let other people know & understand the laws , knowing how the french like their red tape I wouldn’t be surprised if they still threw a wobbly for fishing without license for these non native invasive crayfish destroying their environment ?

When we were ‘working’ on a campsite nr Banbury, we used to put a net into the stream and usually got a good haul of Crayfish.
In UK you can net Crayfish-with landowners permission but if you want to line fish them you need a licence!!!!
I used to use a Ginger jam/Garlic/Chilli mix-my own mix-on the tails, yummy.
You can buy the tails, but it’s not the same!

Very nice sauce undoubtedly - but overpowering the delicate taste of the fresh crayfish surely?

Maybe for you but not for the 3 people that did eat them , anyway we’re in France eating anything here without garlic Gets you thrown in jail ?
 
Nice one, they look well fine. Are they quite fiddly to peel?

Yeh fiddly & time consuming , I think I would be much faster next time but on the day we’ll worth it
I was we’ll chuffed like a child managing his first cycle ride

Quite right, nothing better than catching and cooking your own dinner. I love prawns or langoustines but I'm rubbish at peeling them in the restaurant so usually choose something else.

I was booked out on the boat for a fishing trip tomorrow to catch my own dinner but just had a text saying it's cancelled as storms a brewing :(
 
My son caught some signal crayfish in the Thames near Oxford..we had them in Fresh water for a day to clean them up.. delicious..
