Thinking of a new inverter

Hi all at the moment we have a 600w pure sine wave inverter with a peak of 1200w, runs our small vacuum, laptop, wifes straightener and even a small hairdryer an setting one it’s really all we need, but as we are having a new van I’m wondering weather to upgrade or not to a 2500w with a peak of 4000w,the van will have two new 100a gels onboard.
We have a 700w toaster and a 2000w kettle for when we are occasionally on hookup would my maths be correct saying

700w /12v = 58.33A per hour so for 5 minutes run time that’s 58.33A /60 = 0.972 x5 =4.86A

2000w /12v = 166.66A per hour so for 3 minutes run time that’s 166.66A /60 = 2.77 x3 = 8.33A

I now there is a % drop through the inverter but it would mean I could do the toast for around 7A and boil the kettle for around 12A? We will have 320w of solar on the roof.
we would probably still use the gas for the kettle but using the toaster would be good and we would get a 1000w panini maker, plus I’m sure the wife would love a hotter hair dryer I keep telling her being bald does have it’s advantages.

With that much solar and battery it sounds do-able to me.
Short term usage shouldn't be a problem even on dull days.
 
Best to stick to the C5 rate with Gels max i.e 20 amps for a 100ah battery so with 2 x 100 ah Gels a max of 40 ah if you want them to last. Having said that they are normally OK at 30amps which would give you 60 amps allowing inverter efficiency an 1100 watt inverter max.
 
Thanks I will switch to lithium at a later date but at this point on the new van it was a £8000 option because it included the solar and inverter that I will fit my self

buy the wife one of those new Dyson hairdryers for Christmas, my wifes old hairdryer used to trip the inverter after about three minutes on half heat.........her new Dyson one will run on full heat for ten mins with no trip .........there not cheap but neither are lithium batteries..........
forgot to mention the inverter is 2000w pure sine
