The Simpson's Irish Raid.

Said the same to my wife

Whilst in the queue for the Dartford crossing on Friday midday 4,5 mile queue.
One of the shorter queues then. 🤣
I had a quick trip from the A1 to the A243 on a Friday afternoon only 3½ hours. 😭

Yesterday we took the ferry from Pembroke to Rosslare, a 4 hour journey which was really almost 5 due to some complications to get into the port. From there we drove up to Rosslarefort at the tip of the beach to a small private site that offers water services and a toilet (we didn't use either) for €20. Very quiet and peaceful.

Leaving Pembroke.

The duty free shop on the ferry would put a few airport duty frees to shame . I picked up 4 litre bottles of Bushmills whiskey for €65, very good value.

Today we did 130km to Dungarvan, on the southern coast. We passed through Waterford - famous for their hand crafted luxury crystal glasses. A beautiful town but we did not stop for lack of suitable parking. We are now in a municipal motorhome area, for €10 we have black, grey and fresh water services and 24 hours of parking. There are 8 official spaces that were all full and you could tell they had been there for a while. So we parked just in front after being assured that so long as you pay in the machine and display the ticket, you can stay. There are more than 20 vans here now, some even parked on the grass so not sure how this will play out, we'll see.

Van lunch today was a couple of 30 day dry aged steaks we picked up in Aldi in Wales, asparagus fried in butter and van roasties which we love. A bottle of Australian wine today.

The meat was properly cooked, obviously, and a knob of black garlic butter was added on top. Lovely.

You're gonna have to explain that.

Wash the asparagus, break off the woody end bit, coat in olive oil and a touch of salt and 5 minutes in an air frier. Simple and delicious.

We usually drop it on top of potatoes for their last 5 minutes. All cooked together. Easy no mess.

Some of us have no choice 😂
Many folk can't choose their path in life, but there might be a junction somewhere along the way that provides an opportunity...we arrived at that junction and seized the opportunity to change direction, for some it works and for others perhaps not.
But folk may never know, unless they try. 🤔😃

Thank you, I'll try that next time.

My comment was tongue in cheek.

That sounds like one for the Richard n Ann motorhome cook book🧑🏻‍🍳

And Garlic mixed with the olive oil or as we prefer Avocado oil.

the locals are really friendly and everyone who passes by says hello or how you doing or similar.
Yes they are very friendly, takes ages to get anywhere, small villages you have to drive through with the windows down as everyone says hello as you drive by.

Only taken the van once but have done quite a bit of work there always found them friendly.
Only ever met one guy who said "to be sure, to be sure" 🤣

"In life, you more often regret the things you didn't do than those you did."

I would suggest that garlic will overpower the delicate flavour of the asparagus and avocado oil will burn quickly.
