Not essential, but a good idea to up-end them so that air can circulate freely.
A double mattress might as well be left where it is.
We use our moho through the winter so the cushions don't move at all.

We remove food (an incentive for vermin) and drain the water in winter (to prevent frost damage) when it's not in use.

I upend mine but I do take bedding into house just so that cupboards have free circulation of air.
I do get a lot of condensation on the surfaces even though have got plenty of ventilation. Last winter I solved this by leaving a small fan heater on the frost setting. I checked with a max min thermometer what was happening and inside didn’t go below .5 ° C and this meant the interior stayed dry.

Unfortunately mine will be in storage so unable to put a heater in. We have taken all of the bedding out and will upend everything. Thanks

It’s only our current van, a PVC, that has had the severe condensation. Most don’t seem to suffer as long as there is some ventilation.

Good ventilation is key.
I have had boats (sitting on top of 100% humidity) and left cushions on board without problem (or heating). Just make sure that the air can circulate around freely.
Make sure that any curtains next to single glazed windows or aluminium frames hang away from them, freely.
If you can use the van more often, you'll keep everything in check and turning over. It can be a good time to get out.
