I'm pretty sure I've read this somehwere but just checking . . .

I currently have red cylinders fitted, but I also have a set of blue cylinders from a trailer tent. I believe I can use either sort by swapping out the regulator to the appropriate one for which ever colour. Can anyone confirm or correct please?

Also what are the pros and cons (blue v red)?

Correct just change the regulator. Red bottles (propane) are better for winter as it has a much lower freezing point.

If that's calor blue ,then its butane. It burn hotter but during colder weather can be difficult to gas off ,but you should be ok in the summer months.
Personally I would just stick to the red calor propane as it's a bit of a faff changing pigtails and regulators. (y)

On most motorhomes they have a mounted regulator so you just change the hoses that connect the regulator to the bottles. Also known as “pig tails”

I would (and probably will) but one (red) cylinder is already empty and the only nearby red cylinders are apparently B&Q, (not very handy) whereas I have one full and one nearly full blue cylinders already here. oops, thought I had already posted the above!
As an addendum to that it looks like they don't do 6kg red cylinders anyway. :(
