Does anyone know what the alternator output should be for a stop/start 2023 Ducato?

It will be what the converter specified some fit uprated alternators some don't.
Only real way to find out is look at the part number on the alternator.

You cold also ask the converter if your van what they speced

I was able to get underneath and take a photo to see the plate on the alternator.
