Hello, We are booking up to travel from Newhaven to Dieppe at the end of May for about six to eight weeks to travel through France into Spain then through Portugal and follow the Spanish Coast around to Benidorm. We where then thinking of going up to Gerona back through France and get the tunnel back to Folkstone.
My question is we are not sure of our return date but not sure if the law states that we need to have a return ticket booked to comply with European laws.
Can you tell me the rules please.

I am pretty sure you don't have to have a return ticket booked. Bit why wouldn't you just book it anyway, unless you want to keep it flexible for a reason.

No law that says you need a ticket booked ,the only problem may arise with your insurance, breakdown cover and medical insurance who most state you need a return booked.
The usual way around this is to book a return for a date that seems about right then change it when you come to it.

Wot he said ^^^^

It makes financial sense to book a return ticket, as they are usually cheaper bought months ahead.
Just make sure the date is flexible, so you can fine tune it for when you return.

We wanted to leave it flexible in case we end up taking another route back but the tunnel prices are ridicules in July and August. Might just head back to Dieppe its less than half the cost.
