I have had this van for a wile have had the engine in and out a few times.

I would fit one battery to chassis.

The chassis earth could be running to the engine earth via control cables...throttle, clutch etc which isnt good

Depends on the engine, the addition of additional earth straps can cause problems with the ECU as you can get micro currents flowing via them.

One is normal on any vehicle. If there were two, which might seem like a good idea, you would not know anyway if one became faulty.

I remember years ago on the early Minis you could always tell if there was an earth strap problem, the choke cable used to get hot, very hot!!
