Driving through Spain in January

Hi everyone. We have an Eriba caravan. We are looking into driving to southern Spain in January (getting a ferry to Santander). Can anyone advise on the best routes down to the Almeria area avoiding as many mountains as possible? Thank you.
 
Make sure you have winter tyres, all season tyres or chains. You might need them.

Logrono, Teruel, Valencia, Alicante, Algeria gets you into warmer weather (by the sea) more quickly than heading due South. Few (if any) tolls after Tuelada.
The stop at Teruel Dinopolis overnight is safe and, further on, Navajas ACSI campsite safer and warmer. I would book Navajas, if you know you can reach it in a day.

Have you checked the ferry availability as they sell out pretty fast.
