When we lived in Liberia, there was palpable excitement when someone drove past the butchers and the cow’s bum was hung up on the door - evidence that he had meat for sale - but you had to move fast when you got the phone call!Camel meat is quite nice but tough. Skewered and barbecued is the best way. I have eaten it many times in Morocco.
I was never quick enough to get a fillet though - I remember one Christmas dinner consisted of the toughest bit of scrag end we’ve ever eaten
