This cable from Amazon is the type of thing you need.

Then I'm sure in Spain you can buy an adaptor to connect the male end to an 2 pin EU plug.
Get a 3 pin adaptor if you return to Ireland.
However most campsites will take the blue round 3 pin directly.

Just in case you are thinking of a one-piece adapter from 2-pin to blue 3-pin, it's not such a good idea. Many of the connection boxes have a door that must be closed to keep out the weather, and the one-piece adapter plus a blue plug won't fit in the box. The type with a short wire, as in the picture, is the best. Blue plugs and sockets are weatherproof.

I use a UK 3-pin plug to blue socket adapter at home to plug the MH into the house mains.

Pay a few £’s extra and get leads with glanded connections

just an example, but the other type effectively have no seal at all where the cable enters

Or should that be 'ineffectively' ?

I have two 25m orange hook-up power cables on-board and a heavy-duty 2-pin adapter (and have had to use it too as some sites abroad don't have the blue Commando (IEC C19/16amp) type connectors).

I've only had to use more than one 25m cable on two occasions but not having a hook-up cable just quite long enough is a real pain. 50m combined length is more than enough for any situation I reckon.

That's also why I carry two 15m (blue flat type) water refill hoses and have had to use them both a few times in Spain this summer. It seems the larger MH's get to park further away from the taps!

Another good tip is to have a selection of tap connectors with you as there were varying types of connectors at different sites in Spain. I have just purchased a £6.50 Link Removed (below) as one site had a water valve with a separate 3/4BSP hose thread outlet connector but it seemed someone had filed the thread right down which made it impossible to screw onto & damned hard and time-consuming to refill with (I lashed it on with para-cord and a towel to stop it spraying everywhere). We were desperate! I have seen domestic type taps available too.

Maybe there's a better solution out there for such circumstances and I haven't yet tried this one so don't know if it is the right part or not for now (but at least I have the option available).

Don't get a 2.5mm hook up cable.
Get 1.5, it'll handle everything you can throw at it and is much more manageable than the larger size when yo come to coil it up again, even if you use a cable reel.
