Are these all much of a muchness or do some brands not work properly? Thinking of popping over to Halfords to buy a set. Anyone know if these work OK?

I had the Eurolites stick-on things on my previous 2007 Ducato. I'm not sure if they deflect, more completely block. But they did reduce light from being projected to the left. The instructions do mention Fiat Ducatos with a diagram on what to do, but they weren't exactly specific about where to place the sticker on that huge expanse of headlight. I ended up putting them on in the dark so I could check the positioning.

When I had Ducatos I used to use insulation tape over the frosted area

Have seen a lot of vans with just a piece of black tape over part of the headlight lens, seems to work Never tried it but don't drive at night in the EU in the van

If they are going on plastic headlamps my advice would be to buy a pair of headlamp protector and stick them on those.
People have had serious problems with the glue reacting with the plastic lens and causing irreparable damage requiring new headlamps.

best way is to shine headlights onto white card and then use pvc tape to blank the upturn at the edge of the beam

I wouldn't be planning to drive at night either. But presumably I need to do something to be compliant with continental regs.

Is that just a thing with the special deflectors you can buy, or would it also apply to black insulation tape?
