Depends on how much time you have, if you don't need to use the autoroutes then use the N roads, most secondary roads in Spain are in excellent condition but there are exceptions.

Lleida, Zaragoza, Soria, Valladolid, Zamora and into Portugal where you may notice some difference in the condition of the roads!

Since 1980
Inland Spain have some of the best roads in Europe and traffic is much lighter than most other EU countries. Why not take the road that skirts above Madrid to Soria and Salamanca?

since a child
or if you have plenty of time just keep the sea on your left . try and be on the closest road to the sea .
makes for an exciting drive .
we do it often , never get fed up with it .
but as said inland roads are great as well.
dont use motorways ,dont use toll roads , avoid dual carriageways ,children arent allowed to play on busy roads and we get more childish every year.
