Has anyone updated the head unit in a Fiat X244?
I wondered how difficult the job would be ?

I assume you have a single DIN hole in the dash? And it's old enough that you won't have to worry about steering wheel buttons and other vehicle functions.

The only fight might be if the connector block on the back isn't ISO standard. If it isn't, finding an ISO adaptor that'll let you plug into an after market stereo might be hard.

Wiring is fairly easy
A normal single din unit upgrade is simple enough, a flip out screen unit is trickier as the original unit is recessed into the dash so you may need a spacer to clear the edge
The 'hens teeth' double din dash fitment part for the x244 opens a whole world of radio/satnav/etc options if you ever find the dash part
My previous motorhome had an all singing head unit that I fitted with DVD and CD multi player but oddly enough I rarely turn the head unit on in my x244
