I am having new Michelin camping tyres fitted to 15" steel wheels should the metal valves be replaced as well.

Lee You could get away with rubber valves, but I would still go for steel valves.
 
I have steel valves just wondered if they should be replaced with tyres.

Steel valves can easily survive a couple of tyres. But for what they cost I always get new ones (y)
 
I'd leave them be unless they look corroded (unlikely) You can always replace the cores if in doubt.
