Can anyone tell me what these two little dudes are sitting on the dash either side of the radio, I've seen something similar in a previous motor I owned but never did find out what they were for, and then there's this black eyeball looking suspiciously like a security camera, how does that work

Correct.
They are normally placed at each end of the windscreen, but if it works ok.

And fourth`ed. They are the same as mine but mine are at the corners of the dashboard. The other thing is probably a spy camera installed by the Korean embassy.
