If joining 2 batteries together on an auto trail with the batteries side by side the space to get my hands in to connect them is tight. Is it better to connect to one battery first and secure it, then have 2nd battery on a stall ready to slide in , connect the lead then slide it in so that the cable goes diagonal across but still going + to + & -to - . Just trying to work out easy way to do it. Cheers.

Whichever way works (and doesn’t result in an inadvertent short between the +’ve and chassis) is the best way.

Sounds as though you have it figured out.

It would be a lot easier if the batteries came out on draw or something or a bigger battery box.

When there's just a pair of batteries it really isn't worth it, unless they are a long way apart, but if they're next to each other with a couple of inches of link wire it's not worth bothering about.
The volt drop over 5 or 6inches will be very low millivolts.
Sounds like the op has enough to worry about as it is.

You must have watched me struggle with mechanical stuff before. Haha.

You try telling my Mrs 5-6” is enough.....

My first two, new, m/h had second batteries fitted by the supplying dealer (who will remain nameless). On each occasion they wired them per Smiffy's first diagram. Couldn't accept that it was wrong .....
