We have 2 x 100amp lithium and a 1600watt inverter, 2 x 100 watt solar.

Could we use one of these?

Ninja Air Fryer Max [AF160UK] 5.2 Litres 1750 watts?​


And considering,

SHARP YC-MG02U-S 800W Digital Touch Control Microwave with 20 L Capacity, 1000W Grill & Defrost Function​


Not at the same time, but when we travelo in Spain and Portugal.

I have similar to you ,but the Victron Multiplus is 2000w,and we have a Corsori 1500w airfryer.
That setup runs both the airfryer and microwave (separatly) with no problems.

we have 200 amps of Lithium 700 watts of solar and a 12/2000/80 Victron inverter charger. Fiat 2.3 150
we can run our Freshjet 2200 a/c For long periods of time as long as we don’t try to turn the van into a fridge. Or an 800 watt microwave no problem.
 
My only comment is whether the 200w solar is sufficient to replace the used energy if you don't travel for a few days as your B2B won't assist in that regard.
 
I think your inverter is too small for the Airfryer. Maybe a lesser Airfryer for the van would be the way to go.
 
An 800W (cooking power) microwave will typically pull over double that power electrically. Magnetrons aren’t that efficient and additional electrical power is needed for lights, turntable motor, cooling fans etc. Also your air fryer stated load is already higher than your invertor rated. I would recommend swapping your current invertor for a high quality minimum continuous-rated 2000W invertor, which your lithiums should power with ease, just check your batteries sum peak discharge current.

A) plenty of sunlight in Spain and Portugal
B) save gas, plus healthier cooking..

It may be better use of energy? ie, free
The energy may be free Dave, but look at the initial cost to obtain that free energy.
Nothing is free.

Not been that much sunlight in the Algarve this winter, we’ve had more than our fair share of cloudy days and more rain than usual, though I wouldn’t have thought that a 1750watt air fryer would work that efficient my on a 1600watt inverter.....just my thoughts tho.
 
Forgot to say Dave ... your inverter's too small ... do you want to invest in a bigger one for the 'free' electricity which might just cover the cost of the new inverter in about 20 years time?

It is all relative I suppose….. for me, the cost of a lithium setup is outweighed by convenience and peace of mind going off grid. We only use the Ninja when on hookup as my inverter would throw a wobbly. We only use it for winding the awning in and out when off grid
