A second vote for Gravelines it's quite small compared to the rest but I think it's more authentic than say Brugge's version minus the Ice skating. Brussels is quite large and spread out over a number of roads and squares.
This year we will stopover at Gravelines then onto Brugge but get the train in Ghent and try the market there, have been to Brugge a lot recently and really like Ghent which is fairly similar but a lot less touristic.
