Portugal - non motorway routes

We will be touring through Portugal this April/May going north to south, we have a motorway electronic tag but we're wondering what non motorway routes we should consider.
We have been twice before, once twenty years ago when visited Porto and Lisburn and last year when we drove along the Douro valley then ambled south to the Algarve to spend time with friends there.
Recommendations please.

I just used Waze and added no toll rd's within the menu ..
 
We traveled down the N2 in November, it’s there equivalent of the NC500. We really enjoyed it although didn’t follow it 100%, it starts at Chaves and if you pop in to the tourist info they will give you a map and passport you can get stamped at various places.
 
Thank you lorger, just googled the N2, that will definitely be the route we will take. Any "must see" stops we should allow for on slow meander down it?

You sure that wasn't the Lagan Valley?

(That's just my jealousy showing. Want to go do a Peninsular war tour sometime!)
