Converted one to a two berth, personally I would say that a 5 berth would be impossible.

We have a Globecar Campscout Revolution which is based on the Fiat Ducatto, this can be used as a 5 berth for sleeping but only 4 berth for travelling so it can be done. We use as a 4 berth, I wouldn't fancy it as a 5 berth. We also had a LWB VW T5 which we used as a 4 berth very happily. as it was a converted Caravelle it could travel with 7 if we wanted to!
