At a guess the immobiliser system is sometimes not recognising the key. Are all your keys original? Do yo have an alarm or tracker fitted?

Are there batteries in the key or fob. Do they need to be replaced 🤷🏼‍♂️

Does it misbehave the same whichever key you use? If your tracker or alarm have driver cards that have to be on the vehicle then it is possible that the batteries in the driver cards need changing.

We had this with our Fiat 2012 - intermittent fault with the engine refusing to start and the yellow/amber padlock on the dash. We had a central locking button on our dash which when we repeatedly pushed it on and then off released the lock and then it started.

How about the fuel cut off under the bonnet
On some models the fuel cut off switch is under the dash board not the bonnet but I don’t think this would be an intermittent fault, it would shut the engine down completely. This is what the handbook says.
