I am aware my Schaudt Elelektroblock EBL 264-7 can charge at around 14.4v and puts this voltage direct to the battery and all 12v services, does this voltage do any damage to any of the 12v bits in the van? My EBL is of course an old design so I wonder if more modern power supplies run at different voltages, 14v to charge the battery and a true 12v to the services. Every time I look at my EBL circuit diagram get an urge to fit a DC-DC controller to set the services to 12v.

Modern power supplies do the same as does your alternator. Devices rated for use on vehicle supplies should be OK from 11v to 16v. It can matter when devices that normally use their own 12v PSU are operated from the van supply - TVs are a good example where models aren't specced for use in a vehicle but just happen to require 12v. Even then it rarely causes an issue but 12v regulators are available if it's a concern.
