Caught an interesting edition of the Food Programme today about fermented food. It is available as a podcast. http://www.bbc.co.uk/programmes/b073655s

Having long been a fan of fermented liquid products this got me thinking of giving it a try. Here are a couple of recipes for fermented tomatoes.

The last one obviously has a health angle but the message from the programme was all about taste.

Hmm, fermented herring, might pass on that one! But I guess it was done for storage as are the fruit and vegetables.

But the programme does mention fermented rhubarb goes well with mackerel.
