Anyone know of a folding trailor that can easily convert from 1 to 2 bikes when needed? Finally getting tow bar fitted so time to start looking around for a trailer.

I believe this could be what you are after. Not got one myself, I have a Weymar 3 bike trailer that can be configured as 1, 2 or 3 bikes but it isn't collapsible.
