Double Skillet temp guage ideas?

Have started using my DS and wonder if anyones used a temp gauge on top successfully to monitor the cooking ?
 
I use a double skillet in the van but also at home most nights but never had the need to see what the temperature is, a lot of the time I only use the one piece so you can see how things are cooking.
 
The double skillet gets very hot even on the lowest gas setting. Best to have it on low and vary the cooking time.

We use it mainly for chicken and lamb casseroles. Cooking time for chicken thighs 30-45 mins, lamb neck fillet 90-120 mins. Check it occasionally and add water if drying out.
 
I am not an expert cook, and have not been very adventurous with the DS. I do find it easy to use, and have a few "signature" dishes. You have a few features to learn. It's easy to burn food on the base. But that burn or crispness can also taste good. Lower temperatures will help. It can then cook quite moist. A chicken breast, pork cutlet or other meat, together with small cubed potato and carrots in oil or butter makes a very tasty one-dish meal in something like 30 mins. And you are using such small amounts of gas. It's quite amazing. As regards the temperature, just keep checking, you'll soon get the idea. When you've got the measure of it, it becomes easy.
 
We use ours for Pizza's. Sometimes trim over sized pizza's and throw the cuttings into the middle. Using the glass lid to watch progress it is quite a lot faster than the oven.
