Since aires generally frown on taking chairs etc out of the van. I’m wondering if you are able to take out chairs and cook using an induction hob (not a gas or charcoal BBQ) on France Passion or Espana Discovery sites?

Not been on that many aires in Europe that actually do frown about getting the chairs out but not done a lot of travelling in Spain.
I have cooked behind the van a few times though when space has been limited, both on LPG but more recently using 240v appliances either the induction hob, George Foreman grill or table top pizza oven.
 
The very nature of vineyards and farms and equestrian establishments means that generally there is somebody to be found ( except that once we spent two nights at a stables, and try as we might we never saw anybody even though horses need to be cared for). Also bear in mind that fire tends to be an ever-present worry, especially in summer when vegetation is dry, so people probably over compensate.

So the simple answer is to ask if they are OK with what you are wanting to do.

And it is polite.

And it means you interact with your host, which can lead to surprisingly pleasant experiences.
 
Until we went to Spain we had also never heard, and therefore took no notice, of this. Nobody ever approached us.

We tend not to take the cadac now.

It may be a Spanish thing that they do enforce, never heard of it being enforced in France and cant say we noticed in Germany (though chairs out was enforced there at a couple of sites)

If there is room to get your chairs out, it’s generally okay, so long as you clear everything away overnight. If you’re not sure, just ask the owners.
