Hi Guys,
Thought this might tempt so of you, easy to prepare and a gorgeous light starter.
Use one green sweet Pepper (the long ones) per person.
Slice it open length ways but only one side, scrap out the seeds, it should open enough to get your finger in.
Fill with feta cheese, then cut a piece of sweet red pepper and just big enough to slip into the green pepper to prevent the chees coming out, it also look good.
Finely chop some garlic (as much as you like) mix with some virgin olive oil, drizzle over the peppers.
Place in hot oven 180` for about 40 mins.
You can serve on their own or with a small salad.
