Info re overstaying a visa

Does anyone know for certain if we can overstay our visas by a few days relying on the 90/180 rule. I do know that the time spent under the visas does not effect the 90/180, and I know that as soon as we get home from the visa trip we could set off back to a schengen country, but I'm hoping that we could stay an extra week if the weather is still good. Our ferry ticket is flexible and our pre-purchased C&MHC insurance covers us for 14 days more that our planned trip.
