Wondering how to remove water tank sensor as only showing 25% full.

What a great choice of motorhome 
Sensor is located in the tank (obviously)
To access it, lift the access hatch located behind the front seats (opposite hab door).
You'll be able to see the fresh water tank and cabling attached to the sensor, which is fitted into the screw cap. (similar to image below)
A clean with descaler might help, in my experience the sensors aren't that reliable even if you make the effort to replace them.
