Really like the winterisation info provided it's very handy as a checklist (just moved all my cereal, biscuits etc out of the van!)
Just wanted to ask why I should put an extra 5psi in my tyres?

extra 5psi is probably something to do with mitigating flat spots on the rubber. A flat tyre has more surface area = bigger flat spot? I mark the tyres/wheel at the contact point, take it for a spin then hopefully I am sitting on a different bit of rubber when I park up; works well for me (y)
 
Pressure and temperature are relative so your tyre pressures usually drop slightly in winter. So in an ideal world you should check them but you don't have to increase pressure, just top them up (y)
 
And another question please...

I've always been puzzled about the vent covers for my 'fridge. Do I put them on (in the winter) just for when the van is not being used and then take them off either in the spring or when I want to use the 'fridge even in winter? Or should I put them on in the winter and leave them on, even if I'm using the van?

Always fit mine when not using the van stops all the crap getting in.

Remove fridge vent covers if using the van and the ambient outside temperature is more than 10°C. The covers impede airflow when conditions are warmer and your fridge won’t work efficiently.
I have little storage space so tend to always leave them at home (not often out and about below 10 if we can avoid it ) and then put them on if not going anywhere in order to keep debris out.
 
As above but also put them on when washing the van.
 
A fridge has to get hot to cool the fridge inside when the temp outside drops below 7deg put your outside vents on it helps to keep the heat in around the burners
