I would wait, I wouldn't be that happy buying a 2003 van sold as a 2007 and the newer multijet engines are so much more refined and nicer to drive.

For a 2007 van if it was in good condition that is a good price, definitely not so for a 2003 van in poor condition! when you come to sell it any prospective buyer would almost certainly look on it as a 203 model and price it accordingly

With the older style engine and all that work to do to it (including new timing chain)I personally would not touch it
