My order's just been delivered from Cornish Food Market.
OK, so I meant to order one fennel bulb & actually ordered a kilo.
I like fennel in moderation - few chips in salads, stews etc, but 1 bulb usually lasts me a fortnight.
Any ideas please what I can do with 3 big fat bulbs???

I did the same a while back with onions - meant to order 3, got 3 kilos. Found a lovely recipe for "golden onion & cider soup" - yummy!

I'm a newbie.
This is a fabulous recipe for Braised Fennel served as an accompanying vegetable to Roast Beef:

4 Fennel Roots (Bulbs)
Juice of half a lemon
2 Tablespoons of Olive Oil (or Butter)
Quarter Pint of Chicken Stock (cube)
Salt and freshly ground Black Pepper

Wash and trim Fennel Roots and cut in half lengthwise.
Put in pan with lemon juice, olive oil or butter and stock.
Season to taste with Salt and freshly ground Black Pepper. Cover pan and cook slowly until tender - 30 to 40 minutes.

For larger quantities just double or triple braising ingredients.

I have another version of this recipe which says:

Five minutes before you remove vegetables from heat, stir in 2 teaspoons of butter and 2 level teaspoons of flour mixed to a smooth paste. Just before serving sprinkle with finely chopped parsley.

I don't do this as I prefer the original recipe as it is very digestible and I feel it doesn't really need thickening.

Grate with potato into an oiled oven proof dish, cheese on top and bake in the oven.

You can freeze the cooked gratin.

My daughter-in-law pours cream into it before she puts the cheese on top.

I sometimes add carrot for a bit of colour.

It takes 45 mins to an hour for an 8 inch round deep dish.

How about slicing it thinly,adding some Liquid (wine,water) and using it as a bed to cook fish on ?

Cooking the half price lamb I bought after Christmas in Sainsbury for tea today. It has been in the freezer.....

The bone will be used for soup stock and the excess meat used in salad, other meals and frozen.

Very little wate in this house.

That was tongue-in-cheek, an attempt at humour if you like.

But, to be serious, I have found three recipes which may interst you.
1: Fennel , Orange and sun-dried Tomato soup.
2: Fennel, Pear and Red Pepper soup.
3: Mushroom and Fennel hot-pot. (This is a slow cooker recipe and,
no joking, it contains Cider).

A dish we like is potato gratin made using St Delia's recipe, but here is a version with fennel in it which I am sure will taste yummy: http://www.bbc.co.uk/food/recipes/fennel_and_potato_gratin_29963
Should go well with roast chicken or fish.

I wouldn't be able to harvest it then, I'll be taking off in spring too! :LOL:

So many great ideas here folks, thanks so much, you given me lots to go on. Sounds as though you think fennel goes well with all sorts of veg, and all sorts of fruit too.
My usual way of cooking is to gather ideas and then make something up based on that and what I have around in the house. I might have to have a bit of a play... :nerd:

Well, in the end what I did was:
1] watercress, fennel & orange salad
2] warm salad of watercress, fennel, orange, red pepper & cheese
3] sliced potato, onion & fennel (4 meals in the freezer)
4] winter veg stew of turnip, sweet potato, courgette, carrot, fennel, tomato, onion (4 meals in the freezer)
