Is a switch under the bonnet to deter vehicle theft practical?

Well yes I believe it’s doable on most engines, but a bit of a faff turning on and off each time you move.
You can also put a valve in the fuel line so that when scrote nicks it they break down not far away. I don’t know why more folk don’t install such a thing.

If it isn't visible, it won't deter anything. It might help to prevent it, but it won't stop a thief from making an attempt, smashing your window or forcing your locks as they won't know it is there.

Isolation switch on starter motor - am assuming said switch would be under bonnet and yes very inconvenient - but better that than no vehicle many miles from home

There's a channel on YouTube called ChrisFix. He did a video a while back showing how to install a cut-off switch for the fuel pump. The idea being that the vehicle may well travel a few hundred metres but then conk out looking like a seeming break-down. I would think this would be better than simply failing to turn over as the thief is likely to assume that there is another security system he hasn't found and do more damage looking for it.

The low pressure/lift pump in the fuel tank of certainly the Ducato, Boxer and Relay is only there to help supply fuel on startup in cold weather to the high pressure fuel pump when in the colder weather the diesel is more viscous. Ever in cold weather, once the engine is running the high pressure fuel pump does not normally need assistance from the low pressure fuel pump.

I didn't know that so thank you for teaching me something new! Would it be possible to fit a system which would cutoff both the high and low pressure pumps and do you think that would work in a similar manner to I described?

A solenoid type cutoff valve let into the fuel line would physically cut off the fuel supply, plus the tracker I have fitted to our van has an output that can trigger a relay to operate the solenoid via a text message or command from our tracker webpage.

Unless your MH is an automatic, unlikely I know, but a bump start or tow would get your MH started for a thief.

Yes, I'm also researching alarms and have found one with a geo-fencing alert that also has the ability to disable the fuel/cutoff the engine. It probably isn't as good as eddievanbitz and his Growler, but it's quite a drive to his place from Warsaw!
