We’ve got one of those Euro layout PVCs where all you have to cook on inside the van is two rings. We like to cook outside when possible, but how about a thread of recipes you can do on just two rings for the biblical hail storms we’ve been getting on Orkney.

Last night we had some haggis and pork sausages that we’d bought in Kirkwall, along with lentils.

Finely chop a small onion and a medium sized carrot and sweat them slowly in some olive oil. When they’re nearly done, add in a thinly sliced leek and a chopped garlic or two.

When it’s all soft and golden, add in the lentils, some water and one of those condensed stock things from Knorr. Or proper stock if you have it. Add some dried oregano, salt & pepper. Simmer, reduce, adjust seasoning, serve with your sausages which you’ve been frying on the other ring, did I forget to mention?

We were starving after lots of walking so added a fried egg each.

200gms Choizo, 400ml tin Chopped toms, 400ml tin butter beans

Chop the Chorizo, fry, when cooked toss in the contents of both tins, stir, heat, then serve with crusty bread.

Simples!

I use often. The two ladies don’t trade any longer but the pans are still available via a new seller.

Chop sausages (works well with the French thin sausages) into four or five segments, cook in fry pan.
Cook a packet of dried rice mix.
Mix sausages and rice mix serve with crusty bread.

South Indian Fish and Aubergine Curry

Pan 1: cook rice at appropriate time or make flatbreads (will post those later)

Pan 2: cut aubergine & one onion into small dice and fry gently until soft. Add in a clove of garlic and one or two chillis (chopped), curry paste or powder (ideally Goan, but hey, we only carry one curry powder!). Fry until paste is well cooked through. Add ½ a Knorr fish stock pot, and a small tin of coconut milk. Simmer a little. Cut fish (ideally a firm one like monkfish) into chunks, add to the curry and cook until fish is just done). Serve.

All purpose flat breads ( anything from Middle Eastern to Indian)

Mix equal quantities of live (important that it must be live) yoghurt and self raising flour into a dough and knead lightly.


Leave for an hour or two to raise.


Then roll and cut out / tear individual flat breads.


Heat ghee or oil in a heavy-bottomed pan and fry the flatbreads.

I use the lid to our little Cadac BBQ to make risotto. One of our favourites is...

Finely chopped onion, garlic, chilli, olive oil, a bit of smoked paprika- cook on low heat till soft
Stir in risotto rice and cook for a minute or so
Add stock - I use veg stock
Add finely chopped long red peppers
Cook on low heat, adding stock as you go
About 10 mins before the end of cooking time add a pack of frozen uncooked seafood and some smoked haddock (I find Waitrose packs the best), add frozen peas or sweetcorn - stir in gently and allow to cook without stirring
Top with shaved Parmesan

Only one pan to wash and you can obviously vary the ingredients.
