We’ve got one of those Euro layout PVCs where all you have to cook on inside the van is two rings. We like to cook outside when possible, but how about a thread of recipes you can do on just two rings for the biblical hail storms we’ve been getting on Orkney.
Last night we had some haggis and pork sausages that we’d bought in Kirkwall, along with lentils.
Finely chop a small onion and a medium sized carrot and sweat them slowly in some olive oil. When they’re nearly done, add in a thinly sliced leek and a chopped garlic or two.
When it’s all soft and golden, add in the lentils, some water and one of those condensed stock things from Knorr. Or proper stock if you have it. Add some dried oregano, salt & pepper. Simmer, reduce, adjust seasoning, serve with your sausages which you’ve been frying on the other ring, did I forget to mention?
We were starving after lots of walking so added a fried egg each.
