Do you have to book a return trip on the ferry/tunnel or is it ok just to book later when you decide to return? Are there any rules about that when you travel to Europe?

Depends on your travel insurance some aren't valid without a return booking.

Wasn't really thinking about that. More to do with visas and restrictions now we are out of the EU. I don't really want to commit to a return date and the tunnel is very expensive for a flexi ticket.

We usually have annual travel insurance so I'm not sure specific departure and return dates matter. You're just covered for whatever you decide to do in that year - you don't inform them about where you are going.

We always used to buy a single ferry ticket out. Then go online a few days before we wanted to return and book to come back.
NEVER just turn up at the port or book within a day, prices just go through the roof.
The comment about travel insurance is something to look at. We only discovered half way through a trip that the small print stated "a return must be booked".
