Touring Europe, west and east, best internet solution?

We have ordered a motorhome for delivery June. I'm beginning to sort out the kit we'll need because if the vehicle needs anything extra at the factory, there's still time to order it.
We plan to tour in Europe, over-wintering each year in the Algarve or over in Greece, seeking some sun. As digital nomads, we'll need internet connections for most of the time. I'm not sure how far we'll get with mobile-phone tethering, if a vehicle-mounted antennae with modem and router will work better or we have to go the whole hog and look at satellite.
As we're a bit bewildered by the plethora of products and prices, a bit of advice would be most welcome.
If a bit of internal camera surveillance and tracking can be built-in to it all, so much the better.

Just been around Europe for 3 weeks with the Netgear M2 on an unlimited EE sim and was streaming Netflix without any issues used around 90g in the first 2 weeks before the month started again and never had anything from EE about usage.
