Vegan chocolate fudge cake for Nick’s birthday, vegan so that our son who is home from Uni could help us eat it! Delicious and I’m no baker normally.

Gluten free bread batter :) Any more solid than that and it doesn't rise. We demolished one loaf yesterday :)

The batter and bread is more yellow than normal as I have had to use wholegrain flours and mixed flours. As a result the bread isn't as light and fluffy as usual but still tasty.

Baked loaf below - you can see it is a bit yellow and you can also see the "break" which indicates the amount of rise. The loaf at the back rose less than the one at the front - it was on the cooler side of the bread maker.

Yesterday's bake, really. Frankfurter, bacon and mushroom pasta in a tomato and herb sauce, topped with mozzarella and a crunchy Emmental/chapelure mix.

Followed by a baguette and butter pudding. Used a day-old baguette and it came out nice and light.

Latest attempt at soda bread, the first one didn't rise properly the second one was under baked so I'm hoping this one is OKView attachment 383584
Sadly still doughy in the middle also too much salt, I will stick to the bread machine for a bit

posted this on MF but in case any of you missed it and are struggling with only plain flour

did note that it was usually a mixture of cream of tartar and bicarbinate of soda that was used, rather than baking powder.

In all the excitement I forgot to post these yesterday.

First is gluten free sticky toffee pudding which Martin says is so horrible he will have to eat it all to save me :) He didn't even tip it out of the cooking bowl. It's a Doves Farm recipe.

and then the no flour chocolate cake posted elsewhere on the site. I baked it in muffin cases and rough iced with vanilla buttercream
