Reading through the manual, tire pressure should be 4.5 bar but at the dealer they said 5 and 5.5.

Who should I listen to Hymer or the Dealer?

Tires are Continental VancoCamper
215/70 R15 CP

Van weight???

CP tyres do run at higher pressure to stop the sidewalls deforming whilst stationery.

If your a regular user then van tyres would be a better ride next time round.

If you are happy using a spreadsheet, this Resource will show you you how axle weights change as you add or remove items from your MH.

So for example, you could weigh your MH with full water, 1/2 a tank of fuel, and then see how the weights are affected by emptying the water, filling with fuel, and adding 2 bikes on a bike rack.
