Stuck Reversing Camera

We want to change the angle on our Waco reversing camera....thought it would be an easy enough job: loosen off the two side hex bolts, adjust the angle and tighten them back up again.
The only problem is that one of the bolts won't come out...it looks like whoever installed it overtightened the bolt so the hole for the hex key has rounded off. I've already used a dremel to cut a slot so I can use a flat-head screw driver....that's hasn't worked either....it just starts to destroy the bolt. Seems like the bolts are made of very soft metal :(

Anyone have any ideas?
 
Molegrips, if they don't work drill the head off. Once the head is off there won't be any pressure on the thread so it should come out easily. Probably stainless steel, hard to drill but surprisingly soft when you put force on them will a screwdriver.
 
if you have room drill through it and put a new bolt in
If I drill out the current bolt then won't the hole need re-threading before I can put a new one in?

Sadly neither molegrips nor pliers will fit into the gap around the camera moulding......its the bolt circled in red that I need to remove:

Normally when you drill the head off there is a tiny bit of thread left that you can get pliers on. Failing that you can use a stud extractor.
