Does anyone know if there is such a thing as an in-line latching RCD.
Obviously I could fit a normal one but I’d rather an in-line if available.

Nope. I can only find inline non-latching (passive) RCD.

I take it you're powering fridges, aquariums or providing frost protection and so don't want to have to reset the RCD when power returns?

Do you mean one that you fit on the output line. If so the answer is yes and I have one on my inverter. I think I ordered it from Ebay, but can't find details any more.

That’s the last resort, but if I can’t find an in-line one then it’ll do. Plenty of space for it but wouldn’t be as neat.

That can doesn’t need to be opened up, I’m happy enough.
