I’ve heard that there’s a lady vet in Southern Ireland just over the border who vaccinates the dogs for entry into Europe!! Has anyone any info on this please.. thank you 🙏

Hi & welcome! :hi: Can't help with this but hopefully someone will post soon that might know.

There are several threads on this already, including this one:
In a nutshell, you can take your dog from UK mainland to NI, and from NI to ROI, without any documentation at all, nobody is checking at the moment. Any vet in ROI will issue a pet passport, but will need documentation. Usually it is an Animal Health Certificate (AHC), but I think a letter from a UK vet with chip number for ID and details of the rabies vaccine if any might be sufficient.

A phone call to the vet would clear that up. We had an old EU pet passport issued in GB that was still valid, so didn't need any of that.
