Is there a legal definition of what 'camping' means in the UK, I wonder. Or, do we motorhorme owners wrongly (or rightly) make our own interpretation ? I for one would be interested in the response from Parking Eye.

What Parking Eye says after the event is irrelevant. What matters is the visible wording on their Notice at the time the motorist enters the managed car park. As for the lack of a legal definition see my post above.
